Friday Feast: Ratatouille Curry and Couscous

A quick post: this was today's lunch, something I made up along the way. I needed to post something today, and so far, this was the highlight of my Friday.
We're still drowning in produce, especially eggplant, tomatoes and zucchini, so I whipped up a ratatouille-like dish with couscous and some curry powder.
It was simple, just chop and saute an onion, garlic, and dice a pepper or two, a zucchini, and an eggplant and add them to the pan.
Add 2 cans of tomatoes, or a few fresh ones (I did both), a teaspoon of curry powder, salt and pepper to taste. Oh, and a can of chickpeas, drained.

In another pot, cook the couscous (instructions are usually on the package, but I love that it only takes 5 minutes).
I added some toasted pecans, a teaspoon of curry powder, salt and pep, minced parsley, and some diced apricots I had waiting to be used. Fluff the couscous and serve the ratatouille over top.
I made a bit too much couscous, so we had impromptu lunch guests to help eat it up.

  1. I can no longer eat Ratatouille since the movie. It now seems unethical.

    But it sure is a colorful meal!
