Blueberry Yogurt Scones

When you're looking for a sweet but not-so-sweet treat, look to the scone!  Mr. Geek is a big fan of these flaky, biscuit-like goodies, so I made him a batch today because he wasn't feeling so well.
If I had had some cranberries or cherries, I probably would have used them, to make some Valentine's Day-inspired scones.  But we tend to always have frozen blueberries on hand, so I used them.

These are delicious any time of day, with a cup of coffee, tea, milk or just plain.  And since they're low in sugar and fat, you don't have to feel entirely guilty about eating one.  Or two.
BLUEBERRY YOGURT SCONES
Ingredients
2 cups of all-purpose flour
1/8 cup granulated sugar + extra for sprinkling
2 tsp. baking powder
1/4 tsp salt
1/2 cup vanilla or blueberry yogurt
1 egg
3 tbsp canola oil
1/2 cup frozen blueberries (or other berries)

Optional glaze
1 tbsp milk
1/4-1/3 cup of powdered sugar
food coloring, if desired
In a large bowl, combine all the dry ingredients (except blueberries).  In another bowl, whisk together the egg, oil, and yogurt.
Add the wet to the dry,
and mix until just combined.
Now get your hands in there, or turn it out onto a floured surface and knead until the dough is smooth (just a minute or so, not too much).  If the dough is too dry and crumbly, add a splash of milk.
Then turn it out onto a floured surface, if you haven't done so already, and pat it flat. It helps to add a sprinkling of flour on top.
Now cut it into your desired shapes. Easiest method is to just cut it into triangles, but you could get all fancy with a heart-shaped cookie cutter or just use a glass like I did.
Extra dough can just be patted into another shape and baked.

Transfer these onto an oiled pan.  If you're not making a glaze, you could sprinkle these with a bit of granulated sugar.  Bake for 20 minutes at 400 degrees.
The smell throughout the house is wonderful.
If you'd like to glaze these, just mix the tablespoon of milk and the powdered sugar together and drizzle it on top, once the scones are cooled.
I added one drop of red food coloring, trying to make this cutesy.  I prefer them without glaze, but with a bit of sugar sprinkled on them before baking.   They're also delicious with honey or jam spread on the insides.
And they're great for kids to help make too, especially the patting and shaping of the dough.  Enjoy!
