One thing that I've recently incorporated into my dishes is panko, a Japanese bread-crumb like topping that has larger, flakier crumbs and a coarser texture. It's great on fish, tofu, and even sprinkled on soup.
I recently made a creamy salmon and potato chowder, and to finish off the soup, I sprinkled some of Progresso's Lemon Pepper Panko on top. I love the punch of lemony flavor it added, along with some crunchiness.
As a member of My Blog Spark, I received a complementary box of Progresso Lemon Pepper Panko from General Mills to try out, along with Chef Michael Chiarello's newest cookbook, Bottega.
This cookbook is great, so elegantly presented but with easily attainable recipes. I tried a modified version of the Roasted Butternut Squash and Mushroom pasta dish and it was incredibly delicious yet simple to make.
If you'd like to try out Progresso's Panko varieties, you can find a $1 off coupon by clicking here.
And be sure to check out the Progresso's Wine & Dine with Chef Michael Chiarello Sweepstakes. Now through December 31st, participants can enter for the chance to win a trip for two to Napa Valley to attend the Spring Bud Break Party, an annual dinner and wine tasting event taking place on May 7, 2011. In addition to two tickets to the party, the grand prize also includes roundtrip airfare and hotel accommodations. Visit www.progressobroth.com for the sweepstakes rules and entry form.

Tip: Faux Fried:
ReplyDeletePanko can also help you make dishes that are not just health-conscious but also mouth-watering. Instead of frying, bake Panko-coated chicken or seafood in a 400°F oven for 20 minutes. While other coatings wilt in the oven, Panko stays light, crispy and delicious—all with out the added fat. Fool your friends with baked Panko chicken parmesan or coconut shrimp.

My favorite way to use Panko is for Halibut...mix together Panko w/lemon zest, s & p, a tbl. of fresh, minced garlic & Parmensan Cheese...coat Halibut filets w/the Panko mixture & bake in a 400 degree oven 15-20 min. Delicious!
