This past weekend we hosted a little holiday get-together with some of my husband's co-workers and their families (who really are friends too) and I incorporated Garden of Eatin's tasty organic chips into the party.
My favorite are the Red Hot Blues, which have a bit of a kick to them. I swear I could probably consume an entire bag myself! The MultiGrain Blues with Sea Salt are also quite tasty, and paired nicely with the dips I served.
First up, hummus with toasted pine nuts, which went well with the MultiGrain Blues and the Original Garden of Eatin' Blue Corn Tortilla Chips.
The blue corn tortillas just look so much cooler than the typical blonde variety, and both kids and adults munched happily on the chips, both with and without hummus.
I also made a hot Spinach Artichoke dip, which was a big hit.
The recipe was easy, using Alton Brown's recipe (minus the cream cheese). I'm planning to make this again for Christmas, but seeing as we only have 1/3 of a bag of Garden of Eatin' chips left (the remains of 3 bags), I'll be getting some more to serve with the dip.
Guests at the party commented that the chips were pleasantly salted, had nice flavorings (someone detected a hint of lime, which she liked), and the added bonus of some nutrition in the chips was great. They also held up well to the thick dips too.
Next time I'd like to do some sort of pico de gallo or a salsa dip, which would probably be nice in summertime too, along with some margaritas.
The Red Hot Blues chips were also very good, with both dips. Despite their sprinkling of cayenne, they are not overwhelmingly hot. No surprise that they're one of the brand's best selling chips. Even one of the kids at the party was enjoying them!
To round out the healthiness of the party, I served some veggies, pickles and olives, as well as vegetable barley soup.
I never would have guessed that a cucumber on top of a Garden of Eatin' Multigrain chip would be so good, and refreshing. And the nutty, hearty taste and texture actually go very well with hot wassail.
Though of course we had to temper all this healthiness with dessert--chocolate cake anyone?
Totally did not bake that!
Now I had all intentions of snapping some shots of the guests at the party, however scatterbrained party hostess that I am, I put my camera atop the fridge while attending to the last minute cooking tasks, and completely forgot about it the rest of the night.However, we had a great time, and it was nice to introduce some of the guests to Garden of Eatin's chips. I love that our local grocery store sells quite a few varieties. They'll definitely be staples in our pantry, with or without dips! I have crushed them up and topped them on vegetarian chili, and it's awesome! So many healthy, wholesome possibilities.
